Yummy Yummy Fish Tacos

I made THE BEST Fish Tacos last night.  Seriously.  Even Eric agreed.  I have been craving Fish Tacos pretty much this whole pregnancy, but can't get them when I want because I'd be spending $15 a plate at Fish City Grill every time.

SO I searched Pinterest for some good Fish Taco Recipes, and ended up putting THREE recipes together to make my Fish Tacos.  This is for me to have it all in one place and not have to flip between three different websites.

I made my fish from this recipe.
I made the Mango Salsa from this recipe.
And I made the YUMMY sauce from this recipe.

The product was AMAZING.  I'm drooling just thinking about it.  Here's the recipe for the Fish Tacos I made.

Fish Tacos

Ingredients for the Fish:
1 pound tilapia filets
2 T Olive Oil
3 T Paprika
1 t salt
1 T Onion powder
1 t Black Pepper
1/2 t Cayenne Pepper
1 t Thyme
1 t Oregano
1/2 t Garlic Powder

Mango Salsa:
1 Mango, Peeled and cubed
1 Avocado, cubed
1/2 Red onion, Finely Chopped (I didn't use this, but I bet it would be good - if i liked onions)
Juice of 1 Lime
Chopped fresh Cilantro
Salt and Black Pepper

Sauce:
1/2 cup sour cream
1/2 cup mayonnaise
1 lime, cut in half
1/2 t Cumin
1/2 t Ground Coriander
1/2 t Dill Weed
1/2 t Dried Oregano
1/4 t Chili Powder
1 T fresh chopped Cilantro

Other Ingredients:
Flour Tortillas (I don't do corn - yuck!)
Shredded Lettuce or Cabbage

Instructions:

  1. Start with gathering the ingredients for the sauce, so it can chill.
  2. In a small bowl, whisk the sour cream and mayonnaise.
  3. Squeeze in the lime juice from one half of the lime, and mix.  You will want the consistency of a pourable, creamy salad dressing, so if it's still too thick, add the juice from the second half of the lime.
  4. Add in all of the spices, and mix thoroughly.  Add the cilantro, and mix.
  5. Cover the bowl, and refrigerate - the longer the better.
  6. Gather the ingredients for the mango Salsa.
  7. Mix the Mango, Avocado, Onion(if desired), and the juice of 1 lime in a bowl.  
  8. Season with Cilantro, Salt, and pepper.  Refrigerate.
  9. Gather ingredients for the Fish.
  10. Preheat oven to 425.
  11. Combine the spices in a small bowl.
  12. Line a sheet pan with foil and add 2 T Olive Oil.  Brush it over the foils in any area where the fish will be.
  13. Rinse and pat dry the fish.  
  14. Place on the pan and brush with olive oil.
  15. Cover the fillets with the spice mix, and rub it in (both sides).
  16. Give the fish a light spray of PAM, and place in the preheated oven.
  17. Cook until nicely brown and flaky - about 10-11 minutes for big fillets, and a minute or two less for small to medium fillets.
  18. While the fish cooks, warm Tortillas on a skillet.
  19. Make your tacos as you wish.  I like to spread the sauce onto my tortilla first, then cut my fish fillet in half and put half in my tortilla, then the mango salsa, and finally a little shredded lettuce.  Roll it up, and enjoy! Mmmmmm!  


I got two fish tacos out of one fillet.  Also, apparently peaches and pineapples are good substitutes for the Mangos if there are no fresh Mangos at the store.  Good to know.
I wish I had taken a picture of this yummy goodness, but my hands were dripping with the delicious juices.  Maybe next time.


Registering Fun - and my Etsy Wishlist

Eric and I registered this weekend.  I was so excited when I woke up on Saturday.  We went to Starbucks and had a nice breakfast together, and then headed off to Target to start the registering process.  It was a bit overwhelming, but I had e-mailed several young mom friends before to get their suggestions, so I thought that I came prepared...I was wrong.  I can't tell you haw many times we came to an item and had this exact conversation:
"What is that?"
"Do we need it?"
"How the heck do I know?!"
"Well, let's just scan it."

There are just so many things that you never think about needing.  Here are just a few:
A bottle warmer - Never thought about the fact that I might wanna warm up my milk quicker, since apparently you can't microwave breast milk.
Bottles and nipples for different ages - Who knew?!  I just thought a bottle was a bottle.  Apparently not, because this was quite possibly the most stressful isle for us.
Nap and Play Sleepers - Didn't even know what this was, but apparently you need them.
Car Safety Mirror - At first I thought it was just silly, but then as I looked at it more, I realized it would probably give me peace of mind in the car - so sure, scan it.

Anyways, it was kinda comical.  Eric was in charge of the scanner and by the end of our Target run, he ended up in the Nerf section - there may also be some Hulk hands on our registry.

After a yummy lunch, we headed to Babies 'R Us, and were immediately overwhelmed the minute we walked in.  And we thought Target was rough.  While in Babies 'R Us, we definitely took advantage of the gliders in the back.  My feet were killing me by the time we were done - and I still didn't feel like I registered for everything I wanted.  I ended up adding and deleting when I got home.

I do wish I could register on Etsy though.  All of the necessities are covered with Babies 'R Us and Target, but all of the cutsie things that I love, and the things to match his room are all on Etsy.  I decided to add some of my Etsy wishes on here...you know for family and such. ;)

First off, I bought my bedding from Etsy today.  It's custom bedding, so there's not a picture of the whole set, but this is the bumper pad and the cute little pillow that would obviously have an A for Aiden:

A few first purchases

I want to document all of the first purchases we make, so I can look back and remember some of Aiden's firsts. First off, a couple of weeks ago, Aiden got his first outfit and shoes from his Lolly (Holly, Eric's mom), and also a pair of shoes from his Uncle Joel!

Of course any son of Eric's needs his own pair of Golf shoes!  These sweet ones are from Lolly. 

Since Eric's outta town this weekend, I went a little crazy buying some baby stuff myself...not anything major. We are obviously waiting until after showers for most things other than furniture, but I couldn't resist a sweet little outfit that I saw at Carter's the first time we went after we found out the gender.  Carter's has some of the sweetest little crab outfits that say "pinch me".  I love them.  I had to go back and buy this one:


The little long sleeve one piece says "pinch me".  So sweet!  Because I will be doing a lot of just that!  And now I'm done buying clothes until after showers.  :)

I also bought Aiden his first set of books this weekend.  I bought some board books, and some of my favorite pictures books that I could find at Half Price Books and with Bonus Points from Scholastic.  Here's the beginnings of Aiden's library:

Week 20




Week: 20
Total weight gain: 15 lbs.
Stretch marks? So far, so good.
Wedding rings on or off? On
Best moment this week:  We had our Gender Reveal Party and found out that we are having a Boy!!  We have chosen the name Aiden Alan.  Alan is Eric's middle name, so it's special.  
We also got his first little outfits from family at the party.  I'll share:

We got this cute little number from Eric's Aunt Debi and Uncle Mike.

My parents bought this cute little hoodie for us while we were at Target that night.

My parents also bought us these sweet little polo onesies from Carter's

And they bought us this sweet little button down.

This sweet little John-John was our gift from my parents at the party.  I love it.
Eric and I also went out that night and bought our first outfit for the baby.  It was so much fun to finally get to buy baby clothes for us!  We bought him this little button down onesie with matching navy pants.  It matched the shirt Eric was wearing at the party, and seemed appropriate.
Isn't it so cute!!  Just like Daddy.

Miss Anything? Having a full wardrobe of clothes.  I feel like I wear the same things over and over, but I refuse to spend much more money on clothes that I will only wear for a few more months. 
Food Cravings: I am trying to wean myself off of sweets now.  It's tough.  This baby is definitely Eric's baby with all the junk food I crave!
Movement:  I felt the baby move the night before Eric and I had our 20 week appointment.  I had him feel, and he too could feel faint movements.  It's the coolest feeling ever.
Belly Button in or out? In, but it's starting to flatten out.  Weird.
Happy or Moody most of the time?  Pretty Happy.  Spring does that to me. :)
Looking forward to: Painting and buying furniture for the baby room!
